Cool cucumber salad

AUBURN UNIVERSITY, Ala. – Beat the dog days of summer this Friday with Live Well Alabama’s Cool Cucumber Salad. It’s a great way to eat something refreshing all while using up those cucumbers from the garden.

“Dill adds a bright burst of flavor to everything from fish to potato salad. If using fresh dill, use a bit more than if using dried. One teaspoon of dried dill can be replaced with about 1 tablespoon of fresh dill, or more to taste.”

Ingredients

  • Two cucumbers, peeled and sliced
  • ½ of diced onion
  • ½ cup of vinegar
  • Two teaspoons of sugar
  • One teaspoon of salt
  • One teaspoon of pepper
  • One teaspoon of dill
  • ½ cup of water

Pro Tips

Try rice vinegar or apple cider vinegar to add a sweeter taste to the recipe. Add more of your favorite fruits or veggies. Try diced tomatoes or bell peppers.

Directions

Mix all ingredients in a large bowl. Cool cucumber salad is then ready to chill and serve.
