It’s that time of year when the temperatures are getting a little cooler and the holiday season is steadily making its way in. This is one of my favorite seasons because I get to spend more time with my family and friends and prepare some delicious recipes, such as these No-Bake Blueberry Sugar Cookie Truffles.
No-Bake Blueberry Sugar Cookie Truffles are super easy to make and only require a few simple ingredients, including Premium Lucky Leaf Blueberry Fruit Filling or Topping. I love using Lucky Leaf Fruit Filling because it’s convenient, ready to use and saves you time without sacrificing quality or taste. I also love that they come with easy to open pull-top lids, which means that no can opener is needed.
These little truffles contain the perfect blend of sugar cookies and blueberries rolled up into balls of yummy goodness. It’s the perfect recipe for the holiday season and great to try when you have leftover sugar cookies.
These easy No-Bake Blueberry Sugar Cookie Truffles will quickly become a fan favorite, so be sure to stock up on a few cans of Premium Lucky Leaf Blueberry Fruit Filling or Topping. No-Bake Blueberry Sugar Cookie Truffles
Serves: 74
Ingredients
- 72 sugar cookies about 2 ½ in diameter
- 4 tablespoons cream cheese
- 6 cups white chocolate melting wafers
- 1 can Premium Lucky Leaf Blueberry Fruit Filling or Topping
- Optional: Cookie crumbs or sprinkles for decoration
Instructions
- Line a cookie sheet with parchment paper and set aside.
- Add your sugar cookies to a food processor. You may need to do this in batches if the entire amount of cookies cannot fit in all at once.
- Pulse until the cookies are crumbled and transfer to a large bowl.
- Next, mix in the cream cheese and carefully fold in the Premium Lucky Leaf Blueberry Fruit Filling or Topping.
- Be sure not to overmix.
- Using a cookie scoop, scoop the “dough” into 1 ½ -inch balls.
- Roll and put on the cookie sheet.
- Place the truffles into the freezer and freeze for about 15 minutes.
- In a large bowl, melt the white chocolate melting wafers by placing them in the microwave and stirring every 30 seconds until melted.
- Dip the truffles into the melted chocolate.
- If the white chocolate happens to harden while dipping the truffles, return the chocolate to the microwave for an additional 20 seconds and continue working.
- Place the dipped truffles on parchment paper and add a few leftover cookie crumbs or sprinkles for decoration if desired.
