Salmon spinach fettuccini

As you already know by now, I’m a fan of quick and easy recipes, especially when you have a house full of hungry boys constantly asking, “Is dinner ready yet?” When I’m short on time, I head to Sprouts Farmers Market to browse the selection of fresh seasoned salmon. Lately I’ve been a fan of the lemon garlic salmon.

Because this salmon is already seasoned, I can cook it in minutes as soon as I get home. I usually pair it with a serving of veggies, but this time I decided to include it in this delicious salmon spinach fettuccini with creamy feta and garlic sauce.

Ingredients

  • 2 packages 9-ounce Sprouts Spinach Fettuccini
  • 4 lemon garlic salmon fillets
  • 3 tablespoons olive oil
  • ¾ cup heavy cream
  • 3 tablespoons butter
  • ½ cup chicken broth
  • 1 tablespoon lemon juice
  • 3 garlic cloves, minced
  • 1 cup crumbled feta
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon fresh dill, minced
  • ½ cup grape tomatoes, sliced
  • Salt and pepper to taste

Instructions

Cook the spinach fettuccini pasta according to package directions, or until done to al dente. Drain, drizzle with a tiny bit of oil and toss well. Set aside. Heat oil in a large nonstick skillet over medium heat. Add the salmon and cook for 3-5 minutes, then gently flip and cook for 3-4 minutes more or until flaky. Set aside on a plate. To the same preheated skillet add garlic, cream, butter, fresh dill, chicken broth, feta, Parmesan cheese, lemon juice and sliced grape tomatoes. Cook for about 7-10 minutes, stirring continuously until a smooth sauce forms. Season with salt and pepper. Add the cooked pasta to the sauce and cook for a couple of minutes more, just until heated through. Place the salmon on top of the noodles and drizzle some of the sauce on top. Garnish with fresh dill and serve immediately. Enjoy.
