Ingredients
- 1 lb. pork loin cut into small strips
- 2 cups cauliflower florets
- 1 cup broccoli florets
- 1 cup snap peas
- ½ cup baby carrots
- 2 tablespoons garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Honey Garlic Sauce:
- ¼ cup olive oil
- ¼ cup honey
- 3 cloves minced garlic
- 3 tablespoons hot sauce
- 2 tablespoons water
Instructions
Preheat the oven to 350 degrees. Spray a sheet pan with cooking spray or line it with foil and set aside. In a small bowl, whisk together the olive oil, honey, garlic, hot sauce, water, salt and pepper. Set aside. Arrange the pork loin and vegetables onto the prepared sheet pan. Pour the sauce over everything and sprinkle with garlic powder, paprika, salt and pepper. Toss to coat evenly. Bake for 25-30 minutes or until the vegetables are tender and the pork reaches a minimum internal temperature of 145 degrees. Serve alone or with rice for a heartier meal. Enjoy.
