Recipe: Classic Cabbage Soup

Cabbage Soup

Ingredients

  • ½ onion, chopped
  • 2 teaspoons olive oil
  • 6 cups cabbage, chopped
  • One carrot, shredded
  • One can diced tomatoes, 14 ounces
  • One bay leaf
  • 1 teaspoon Italian seasoning
  • 1 tablespoon tomato paste
  • 6 cups chicken broth
  • 1 tablespoon dried parsley
  • Salt and pepper to taste

Directions

  1. In a large pot, cook the onion in olive oil over medium heat until tender, 3 to 4 minutes.
  2. Add cabbage to the pot and cook until it starts to soften, about 8 minutes.
  3. Add all of the other ingredients to the pot and bring to boil. Reduce the heat to low, and simmer uncovered for 15 minutes or until the cabbage is tender.
  4. Salt and pepper to taste. Remove the bay leaf before serving.
